We purchase a whole cow of carefully selected Akaushi beef raised in Aso! Akaushi beef has less fat (marbling) than Japanese black beef, but is characterized by its high content of umami components, and is characterized by the natural umami flavor of the meat rather than the fat. Our Akaushi beef is always aged for about two weeks in a process called "edakarashi," which removes excess moisture from the meat, making it moist and more flavorful.
